Purpose of Role
Responsible for the planning, implementation, execution, and monitor of hotel's food hygiene and sanitation plan.

Responsibly Description

• In conjunction with the Director of quality, Executive Chef and Executive Sous Chef, implement and prepare new procedures and guidelines.
• Maintain the entire food safety system within the department, to meet or exceed Marriott standards.
• Ensure all government regulations are being followed and new information is passed on and training completed if required.
• Conduct food supplier audits to ensure that they are compliant with the hotel's food safety standards.
• Ensure that all food products received into the kitchen are of the required standard and quality.
• Ensure that all food preparation equipment is being used safely and correctly, and that it is cleaned and maintained as per schedule.
• Organize food safety training and chef certificates training for Talent.
• Ensure all Talent work in compliance with Safe Food and Hygiene Standards Manual and ensure HACCP standards are being met.
• Ensure all temperature records are completed as per requirements.
• Ensure that appropriate food sampling and swabbing are conducted accordingly.
• Implement food microbial testing at required frequency.
• Ensure that monthly internal food safety audits are conducted accordingly and documented.

• 確保所有食物加工的設備是依照計畫做清潔和保養維護。
• 針對人才進行食品安全培訓及廚師證照課程。
• 確保所有人才都遵守食品衛生安全操作標準及危害分析重要管制點(HACCP)標準。
• 確保按照文件要求完成所有的溫度紀錄。
• 確保適當的食品留樣及檢驗。
• 定期進行食品細菌化驗。
• 進行每月內部食品安全監測及稽查行動,並完成相關文件資料。
